Pepitas and pumpkin seeds come from the same genus of plants, but they are not the same thing on the plate. A pepita is the kernel of a hull-less pumpkin variety, sold with the seed coat already removed. The plain pumpkin seeds you find in a supermarket bag are usually the whole seed of a common carving or pie pumpkin, hull and all. That single anatomical difference drives everything else: how much edible material you get per pound, how long it takes to roast, how it feels in your mouth, and how the nutrition numbers read per 100 g.

The naming makes it harder than it needs to be. In Spanish, pepita simply means little seed of a fruit, and in Mexican cooking it refers specifically to the green hulled kernel used in sauces, moles and snacks. Anatomy and Cultivar: Where the Hull Comes From

A pumpkin seed has three parts: the outer seed coat (the hull, or testa), a thin papery inner skin, and the green kernel inside, which is mostly cotyledon. In a standard carving or field pumpkin the hull lignifies as the seed matures, turning into a tough, pale, fibrous shell that accounts for roughly 35 to 45 percent of the seed's total weight. You can crack it between your teeth, but it stays gritty and papery no matter how long you cook it.

Hull-less varieties carry a natural mutation that suppresses that lignification. In Styrian oil pumpkins (Cucurbita pepo var. styriaca) and modern hull-less types such as Lady Godiva, Triple Treat and Kakai, the seed coat stays a thin, translucent film that shrivels and falls away as the seed dries. Growers scoop and wash the seeds, dry them, and the remaining husk is light enough to blow off in a seed cleaner. What is left is the flat, oval, dark-green pepita sold in bulk bins.

There is a second route to the same product: mechanical de-hulling. Ordinary pumpkin seeds can be soaked, dried and passed through machinery that cracks the shell and separates it by air flow and screen size. These kernels tend to be a lighter, yellower green than true Styrian pepitas and they carry more nicks and broken pieces. If you want to do it yourself, making pepitas from regular pumpkin seeds is possible but slow, and roasting pumpkin seeds in the shell is usually a better use for a hulled cultivar's tough-coated cousins.

Nutrition per 100 g: A Side-by-Side Comparison

The practical way to see the difference is to compare equal weights. Because the hull contributes bulk and fiber but very little protein or fat, a 100 g portion of hulled kernels is far more concentrated than 100 g of whole seeds with the shells still on. Protein is roughly 30.2 g against about 18.6 g, and fat is 49.1 g against about 19.4 g. The in-shell figures are not diluted by water or by cooking; they are diluted by cellulose.

That same fact explains the one result that surprises people: the in-shell product shows far more carbohydrate and far more fiber per 100 g. Both of those numbers come largely from the hull, which is mostly insoluble structural carbohydrate. If you crack the shells and discard them, you are not eating most of that fiber. This is the most common source of confusion when people compare a bag of pepitas with a bag of roasted seeds.

Minerals follow the same pattern. Magnesium reads 592 mg per 100 g for raw hulled kernels and zinc 7.8 mg, because the mineral is stored in the kernel, not the shell. The in-shell entries in food composition databases frequently do not report these minerals at all. Hulled pepitas roast fast because they are thin and already dry. Two cups of raw kernels spread in a single layer on a sheet pan take about 15 to 20 minutes at 325 degrees F, with a stir every five minutes; they go from pale olive to light gold and start to puff and pop audibly. Whole in-shell seeds need more time and more heat to get heat through the hull: 30 to 45 minutes at 300 to 350 degrees F is typical, and they finish chewy rather than crisp.

Texture decides the dish. Pepitas are tender enough to eat by the handful, to blitz into a thick sauce, or to scatter over soup where they stay pleasant after a minute in hot liquid. In-shell seeds are a deliberate eating project: you crack, chew and discard. That makes them excellent for snacking at a table and poor in a blended sauce, where the hull turns the whole thing grey and gritty.

Here is the rule of thumb. Buy hulled pepitas when the seed will be ground, blended, baked into bread, or used as a garnish where you want a soft bite. Buy in-shell seeds when you want something to crack and chew, or when you are processing a fresh pumpkin anyway.
