Shake fine salt over a tray of hot roasted pepitas and a surprising amount of it ends up on the pan rather than on the seeds. The kernel surface is smooth, dry and faintly oily in patches, so crystals bounce off instead of clinging. Fixing that is the difference between a batch that tastes seasoned and a batch that tastes like plain seeds with a salt lick at the bottom of the bowl.

There are three reliable approaches: coat in oil before roasting and salt after, soak in brine before roasting so the salt is inside the seed, or toss with fine salt and a little moisture the moment they leave the oven. Three Methods for Making Salt Stick

Oil first, salt after is the standard home method. Toss the raw kernels with one teaspoon of neutral oil per cup, roast at 325 degrees F until golden, then toss the hot kernels with fine salt in a bowl. The warm, tacky oil surface grabs the crystals and holds them. It is fast and controllable, and it produces a moderate sodium level, because only what touches the oily surface stays.

Brine soaking puts the salt inside the seed rather than on it. Dissolve one tablespoon of fine salt in one cup of water, soak the raw kernels for thirty to sixty minutes, drain well, pat dry, then roast a little longer than usual to drive off the absorbed water. The result is seasoned through rather than on the surface, with a deeper, more integrated saltiness. It is the best method for snacking and the worst for controlling sodium precisely, because uptake varies with soak time.

The post-roast moisture toss is the rescue method for dry-roasted batches. As soon as the kernels come out, spritz them with a little water or oil, or toss them with salt dissolved in half a teaspoon of water per cup, and return them to the oven for two to three minutes to dry. The Sodium Maths, Per Batch and Per Serving

Start from the baseline: raw hulled pepitas contain about 7 mg of sodium per 100 g, which is around 2 mg in a 28 g serving. Dry-roasted kernels with nothing added read about 18 mg per 100 g, or roughly 5 mg per serving; the increase is moisture loss concentrating what was already there. Commercially roasted and salted kernels reach 256 mg per 100 g, which is about 72 mg per 28 g serving.

For a homemade oil-and-salt batch, the arithmetic is straightforward. One quarter teaspoon of fine salt contains about 575 mg of sodium. Spread across a two-cup batch of roughly 270 g, if around 60 percent clings to the kernels, that is roughly 345 mg across the batch, or about 128 mg per 100 g, which is about 36 mg in a 28 g serving. Add more salt or lose less to the bowl and the figure moves up quickly.

Brine is the heavy option. A brine of one tablespoon of salt in one cup of water holds about 6,900 mg of sodium. If the seeds take up a quarter to a third of it over a thirty to sixty minute soak, that is roughly 1,700 to 2,300 mg across a 270 g batch, or about 630 to 850 mg per 100 g, which is 175 to 240 mg per 28 g serving. Shorten the soak to ten minutes and drain thoroughly and you roughly halve that.

Timing the Salt, and What to Do With an Over-Salted Batch

Salt after roasting, almost always. Adding salt before the oven draws a little moisture to the surface, which can make the seed coat tough and slows browning, and it masks the colour cues you need to read during the last critical minutes. The two exceptions are the brine method, where the soak is the point, and a very light pre-salting of in-shell seeds, where the salt has a shell to work through.

If you salt before roasting anyway, use coarse salt rather than fine, and understand that much of it will end up on the pan. If you want the deep seasoning of brine without the sodium, cut the soak to ten minutes and increase the drain time, or use half the salt and add a squeeze of acid at the end, which sharpens perception of saltiness without adding more.

For an over-salted batch, there are three fixes. Roast and salt an equal quantity of unsalted kernels and combine the two, which halves the concentration.
