How to Roast Pepita Seeds: Timing, Pans and Doneness
Two batches of pepitas can come out of the same oven tasting like different products, and the difference is almost always timing, pan choice and how crowded the pan was. Because the kernels are small, thin and already dry, they move from perfectly toasted to scorched in a window of about three minutes at 325 degrees F. Getting that right is less about a recipe and more about learning the sequence of cues.

Oil roasting means tossing the kernels with one teaspoon of neutral oil per cup, about 135 g, before they go in. The oil conducts heat into the seed more efficiently, evens out hot spots, and gives the surface a gloss that browns evenly. Dry roasting means no oil at all: kernels straight onto the pan or into a dry skillet. Glass and ceramic dishes heat slowly and retain heat longer, which means a slower start and a higher risk of carryover burning after you pull them out.
Skillets are a different animal altogether. A cast-iron or stainless pan on the stovetop gives you the fastest response and the best aroma control, because you can see and smell every stage, but it demands constant movement: five to eight minutes over medium-low heat, shaking or stirring every thirty seconds. It is the right choice for one cup or less and the wrong choice for a crowd. Sheet pans scale; skillets do not.
The thin-layer rule is the single most important variable. Kernels should sit in one uncrowded layer with visible bare pan between them. That means about one cup on a quarter sheet pan, two cups on a half sheet, and four cups only on a full-size pan with a stir every four minutes. Minutes 0 to 5: nothing much happens; the kernels warm through and any surface moisture leaves. Minutes 5 to 9: they begin to look dry and slightly matte, and the first faint green-to-gold shift appears on the thinnest kernels. Minutes 9 to 14 are the working window. The colour evens out to light gold, the kitchen starts to smell nutty, and you will hear the first faint pops as internal moisture expands and the kernels puff.
