Single Layer Spacing and Pan Setup

Spacing is the most important variable and the easiest to get wrong. Seeds should sit in one layer with clear metal visible between them - roughly 5 mm of gap around each seed. When seeds touch or overlap, the moisture escaping from one condenses on its neighbour and you get a soft patch in the middle of the tray. Use a rimmed sheet pan, not a flat cookie sheet. Stirring Schedule, Parchment versus Bare Sheet

Stir on a schedule rather than when you remember. At 300 degrees F, stir every 10 minutes; at 325 degrees F, every 8 minutes. Use a thin metal spatula and push from the outside toward the centre, since the edges of a pan always run hotter than the middle. Pull the tray when the seeds are light golden and a few have begun to pop, then transfer them to a cold, unlined plate or a wire rack so they stop cooking immediately.

Leaving the seeds on the hot sheet pan is the classic over-roasting mistake: the pan retains enough heat to carry them a shade or two darker, and because they are already near the edge, that is often enough to turn them bitter. If after 12 minutes of cooling the centres are still chewy, return them to a 300 degrees F oven for 5 to 8 minutes rather than raising the temperature.

Room humidity matters more than most people expect. On a damp day, cooled seeds can pull moisture back out of the air and lose some of their snap within an hour or two.
