How to Roast Pepitas in the Oven
The oven is the most forgiving way to roast pepitas, and it is the only method that scales beyond a couple of cups. Unlike a skillet, it surrounds the kernels with steady, dry heat from every direction, which is what produces an even colour instead of the patchy result you get from stirring a pan over a burner. It also lets you walk away for five minutes at a time, which a skillet never does.
What the oven demands in exchange is accuracy: a real preheat, the right rack position, the correct adjustment for convection, and an honest temperature for the batch size. Rack Position, Pans and Convection
Put the rack in the upper-middle position, roughly one third down from the top. That places the pan in the zone where radiant heat from the element above and convected heat from below are closest to balanced. Too high and the tops of the kernels brown before the undersides have done anything; too low and you will scorch the pan contact points while the tops stay pale. A second rack below it should stay empty so air can circulate.
Use a rimmed sheet pan at least half-sheet size, heavy aluminium if you have it. Rimmed matters because you will be stirring; a flat tray loses kernels down the back of the oven. Heavy matters because a thin pan flexes and cools when you slide it onto the rack, and the resulting uneven contact shows up as uneven colour. Insulated or double-walled pans are the wrong tool here: they slow the heat and produce soft, dry kernels rather than crisp ones.
If you are running a convection or fan-assisted oven, adjust rather than following the recipe blindly: the moving air transfers heat faster, so either drop the temperature by 25 degrees F, using 300 instead of 325, or keep the temperature and cut the time by roughly a fifth and check three to four minutes early. The Temperature Matrix
Temperature choice is a trade between margin for error and speed. Every 25 degrees F you add roughly halves the window in which the kernels are perfectly toasted and shortens the total time by about a quarter. For a first attempt or a large batch, go low; for a single cup when you are in a hurry and standing at the oven, go higher and treat it as active cooking.
At 300 to 310 degrees F, two cups take twenty-two to twenty-eight minutes and the colour develops slowly and evenly to a pale gold. The flavour is gentler and sweeter, and the margin for error is four or five minutes rather than one. At 325 degrees F, two cups take sixteen to twenty minutes to a classic light gold with a clear nutty aroma; this is the setting to calibrate your own oven against.
At 350 degrees F, the same batch takes ten to fourteen minutes and the result is a deeper gold with a more pronounced toast, but the useful window narrows to about two minutes, so stir every four and do not leave the kitchen. At 375 degrees F you are working in seven to ten minutes with a real risk of scorching; it is only sensible for one cup or less, with a stir every two to three minutes, and it is the setting most likely to give you a hard, bitter outside with a raw centre.

Cooling, Salting and Storing
Slide the pan onto a wire rack rather than a cold counter, so air moves under it and the kernels stop cooking at a predictable rate. Leave them in their single layer for ten to fifteen minutes; do not tip them into a bowl while hot, because trapped steam will soften the batch you just spent twenty minutes crisping. Salt goes on as soon as they stop steaming, when the surface is still tacky with oil.
Cooled roasted pepitas go into a sealed jar as soon as they reach room temperature. At cool room temperature away from light they hold their best quality for two to three months; in the refrigerator, about six months; in the freezer, up to twelve with very little change. Salted batches soften slightly sooner than unsalted ones, because salt draws a little moisture over time, so make smaller batches of the salted version.
Two final practical notes. If a batch comes out pale but crisp, it is under-toasted rather than ruined: three to five more minutes at 325 degrees F will finish it.
